This cucumber dip (or salad) is enjoyed throughout the Middle East. It's particularly good with grilled meats (like the kibbeh) and it's very easy to make.
Cucumber Yogurt Dip
1 large cucumber,diced salt 2-3 cloves garlic, crushed 2 cups plain yogurt white pepper 1 tbsp. dried crushed mint or 3 tbsp. fresh mint, chopped
Place cucumber in a colander, sprinkle with salt and let drain for 30 minutes.
Mix yogurt with the garlic. Season to taste with salt and pepper. Add mint and cucumber and mix. If you want a less chunky dip you can mash it in a blender or food processor.
