Mauritanian Peanut Stew


This is just a vegetarian version of mafe, nearly identical to the meat version except for the use of vegetable rather than animal protein, introduced into the stew later in the cooking process (how late will depend on the type of protein you are using, look at the package instructions). I used Daring chick'n, a brand new to me, and it was unsuccessful: the chick'n was way too rubbery. I'd stick to my tried-and-true Morning Star chick'n next time.

Mauritanian Peanut Stew

Ingredients

  • 1 Tbsp cooking oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp tomato paste
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • salt & pepper to taste
  • 1 tomato, chopped or 3/4 cup canned diced tomatoes
  • 1 carrot, peeled and sliced
  • 1 potato, peeled and cubed
  • 1 small sweet potato, peeled and cubed
  • 1/2 bell pepper, chopped
  • 1 Scotch bonnet or habanero pepper (optional)
  • 1 cups vegetable broth
  • 8 - 12 oz tofu/seitan (cubed) or vegetarian chicken or beef slices (optional)
  • 1/2 - 1 cup natural peanut butter
  • parsley or cilantro, chopped, for garnish

Directions

In a large saucepan, heat the oil over medium heat. Add the onion and cook until soft. Add the garlic and cook for a minute. Stir in the tomato paste, ground cumin and coriander. Season with salt and pepper to taste. Add the tomatoes, carrots, potatoes, sweet potato, bell pepper and Scotch bonnet pepper, if using. Stir well.

Add the broth, bring to a boil, cover, reduce heat to low and cook for 20 minutes, stirring occasionally.

In a separate bowl, mix the peanut butter with a ladle of broth. Stir this mixture into the pot, mixing until it incorporates. Stir in the vegetarian protein. Cover and cook for 10 more minutes.
