Berry Sauce

Lithuanian pancakes are often eaten with a berry jam/sauce. You can use a commercial one, or you can make a quick version yourself. This recipe is for raspberries, but I used frozen mix berries instead which I first defrosted. It was quite good, though perhaps next time I'd halve the cornstarch as the sauce was pretty thick.

Berry Sauce
Ingredients
- 1/3 cup water
- 3 Tbsp sugar
- 2 Tbsp cornstarch
- 1 1/2 cups raspberries or other berries
Directions
In a small saucepan, bring the water, sugar and cornstarch to a gentle boil over medium heat. Add the berries and simmer for one minute. Mash berries to taste.
