Vegan Lemon Pasta with Basil

This is a vegan recipe.

My vegan daughter was very happy with this recipe, and in particular with the vegan Parmesan. It's also rather easy to make. I didn't use the optional mayo as my daughter didn't think it was necessary.

Vegan Lemon Pasta with Basil

Ingredients

  • 8 oz spaghetti
  • 1/4 cup lemon juice
  • 1 Tbsp lemon zest
  • 1/4 cup olive oil
  • 1/4 cup vegan Parmesan
  • 1/4 cup vegan mayo (optional)
  • salt & pepper to taste
  • 1/4 cup torn basil leaves

Directions

Bring a large pot of salted water to boil. Add pasta and boil until it's cooked to your preference.

Meanwhile, in a large bowl whisk together until creamy the lemon juice, lemon zest, olive oil, vegan Parmesan, mayo (if using) and the salt and pepper. Whisk in 1/4 cup of the water from the pasta.

Drain the pasta and add it to the bowl with the sauce. Mix to coat. Mix in the torn basil and serve.
