Florence is the most important city in Tuscany and its cuisine is basically Tuscan cuisine. For that reason, I originally skipped it when I reached the "Fs". However, it does have a few distinct dishes of its own, and I decided to try a couple as I visited cuisines I had originally skipped. I wish I could have made one of the famous Bistacca alla Fiorentina, a grilled porterhouse steak, but what makes the dish distinctive is the meat from Tuscan Chianina cows, something I can't find here in California.
