Baked Pork Stroganoff with Mayonnaise


This simple, but delicious, recipe comes from the Nani Nani blog, a blog on Estonian cuisine kept by a Estonian writer and foodie. It's one of the most beautiful food blogs I've seen and I highly recommended.

I also recommend the dish. Don't think about the calories, and instead cherish how quick and easy it is to put together. You can have it ready in under an hour. It's a substantial meal, so it's probably better left for a coolish night. Serve it with mashed potatoes to soak in the richness of the mayonnaise.


Baked Pork Stroganoff with Mayonnaise

Ingredients

  • 1.5 lbs pork loin, sliced into strips
  • salt & pepper to taste
  • 2 tbs. cooking oil
  • 2 yellow onions, sliced
  • 8 oz. mushrooms. sliced
  • 1 cup mayonnaise

Instructions

Preheat oven to 400°F

Season pork strips with salt and pepper. Heat oil in a frying pan over medium-high heat. Add the pork strips and brown in both sides. Using a slotted spoon remove and transfer to a baking dish. Add the onions to the hot oil and cook until soft, but not brown, about 5 minutes. Top pork strips with the onions, then cover with mushrooms. Spoon mayonnaise onto the mixture, trying to even it out.

Place in the oven and cook for 30 minutes. Serve with mashed potatoes.
