The cuisine of the island Dominica is, like that of its neighboring islands, Creole cuisine at its heart, a mixture of the influences of the different people who touched the island over the centuries. Its most prized dish are "mountain chickens" - or frog legs. The interior of Dominica was once upon a time full of these large frogs, but they are now endangered through over-hunting (picking?). Regular chicken and seafood are also often featured at the dinner table.

I cooked only a couple of recipes from Dominica. These were:

  • Crapaud
    Fried Mountain Chicken Legs (but made with regular frog legs)
  • Calypso Chicken
    An absolutely delicious and sophisticated dish of chicken with mushrooms.
