Located in northern Mexico, bordering Texas, Coahuila is a land of cattle and of orchards. Its cuisine relies heavily on meats, including goat, and takes great advantage of the native fruits. Beyond that, it's a typical northeastern Mexican cuisine with dishes such as tamales, stews, barbacoa, tacos and nachos.
