I wanted something creamy, refreshing, with a light flavor that would go well with the cake regardless of its flavors. I wanted it to be simple, and doable with whatever I had at home.  My original plan had been to make this <a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Salted-Caramel-Ice-Cream-354517\">salted caramel ice cream<\/a>, but I decided at the last moment that it was too complicated, and as I searched for other recipes the idea of making maple ice cream came to mind.  I had loved it as a child, when my grandmother used to make it from the tiny bottles of maple extract she&#8217;d gotten during her last trip to the United States, before my birth, and for that reason it still holds a warm place in my hand. Plus, it&#8217;s very simple to make and I had maple syrup at home.<br \/>\nThe following is the recipe I made, from the <a href=\"http:\/\/www.amazon.com\/gp\/product\/0894803123?ie=UTF8&#038;tag=marga-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=0894803123\">Ben &#038; Jerry&#8217;s Homemade Ice Cream &#038; Dessert Book<\/a><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=marga-20&#038;l=as2&#038;o=1&#038;a=0894803123\" width=\"1\" height=\"1\" border=\"0\" alt=\"\" style=\"border:none !important; margin:0px !important;\" \/>. It&#8217;s a great recipe, the results gave me a smooth, tasty ice cream which I loved (though not as much as granny&#8217;s).<br \/>\n<b>Maple Nut Ice Cream<\/b><br \/>\n2 eggs<br \/>\n3\/4 cup sugar<br \/>\n2 cups whipping cream<br \/>\n1 cup milk<br \/>\n1\/4 cup maple syrup<br \/>\n1\/2 cup walnuts, chopped<br \/>\nPut eggs in a large bowl and whisk them until light and fluffy.  Whisk in the sugar, a little at the time, until completely mixed in.  Whisk in the cream and milk.  Pour into the ice cream machine and process according to the instructions.<br \/>\nTwo minutes before the ice cream is done add the maple syrup and then the walnuts.
