For twenty five years, I&#8217;ve been exploring cuisines alphabetically.  And yet, after such a long time I&#8217;ve only gotten through the K&#8217;s.  As I enter my late 50&#8217;s, it&#8217;s clear that this project will never be finished  &#8211; though perhaps my daughters one day will take it on themselves.<br><br>I am thus both celebrating the end of the &#8220;K&#8217;s,&#8221; while making a change in the project.  From now on, I&#8217;ll prioritize national cuisines &#8211; in the hope of at least being able to get through those before I die.  I&#8217;ll still cook regional, ethnic and historical dishes &#8211; but not as often.  I&#8217;d already started doing just one dish from these non-national cuisines, and I&#8217;ll mostly continue on that vein.<\/p>\n\n\n\n<p>As far as the <strong>K&#8217;s<\/strong> go, I explored 26 cuisines, including those of <a href=\"https:\/\/marga.org\/food\/int\/kenya\/\"><strong>Kenya<\/strong><\/a>, <strong><a href=\"https:\/\/marga.org\/food\/int\/kazakh\/\">Kasakhstan<\/a><\/strong>, <strong><a href=\"https:\/\/marga.org\/food\/int\/kiribati\/\">Kiribati<\/a><\/strong>, <strong><a href=\"https:\/\/marga.org\/food\/int\/korea\/\">Korea<\/a><\/strong>, <strong><a href=\"https:\/\/marga.org\/food\/int\/kosovo\">Kosovo<\/a><\/strong>, <strong><a href=\"https:\/\/marga.org\/food\/int\/kuwait\/\">Kuwait<\/a><\/strong> and <strong><a href=\"https:\/\/marga.org\/food\/int\/kyrgyztan\/\">Kyrgiztan<\/a><\/strong>.  <\/p>\n\n\n\n<p>I explored the regional cuisine of <a href=\"https:\/\/marga.org\/food\/int\/kabardia\/\">Kabardia<\/a> in the Caucasus, of <a href=\"https:\/\/marga.org\/food\/int\/khuzestan\/\">Khuzestan<\/a> in Iran, of <a href=\"https:\/\/www.marga.org\/food\/int\/karnataka\/\">Karnataka<\/a>,  <a href=\"https:\/\/marga.org\/food\/int\/kashmir\/\">Kashmir<\/a> and <a href=\"https:\/\/marga.org\/food\/int\/kerala\/\">Kerala<\/a> in India, of <a href=\"https:\/\/marga.org\/food\/int\/kalimantan\/\">Kalimantan<\/a> (Borneo) in Indonesia and <a href=\"https:\/\/marga.org\/food\/int\/kelantan\/\">Kelantan<\/a> in Malaysia, of <a href=\"https:\/\/marga.org\/food\/int\/kansai\/\">Kansai<\/a>, <a href=\"https:\/\/marga.org\/food\/int\/kanto\/\">Kanto<\/a> and <a href=\"https:\/\/marga.org\/food\/int\/kyushu\">Kyushu<\/a> in Japan and of  <a href=\"https:\/\/marga.org\/food\/int\/kansas\/\">Kansas<\/a>, <a href=\"https:\/\/marga.org\/food\/int\/kentucky\/\">Kentucky<\/a> and <a href=\"https:\/\/marga.org\/food\/int\/kansascity\/\">Kansas City<\/a> in the US.<br><br>I also explored the cuisine of the <a href=\"https:\/\/marga.org\/food\/int\/kachin\/\">Kachin<\/a> people in the Burmese highlands, of <a href=\"https:\/\/marga.org\/food\/int\/kashubiac\/\">Kashubian-Canadians<\/a> and <a href=\"https:\/\/marga.org\/food\/int\/koreanamerican\/\">Korean-Americans<\/a> and of the <a href=\"https:\/\/marga.org\/food\/int\/kurdistan\/\">Kurdish<\/a> people and <a href=\"https:\/\/www.marga.org\/food\/int\/kurdishjew\/\">Kurdistani Jews<\/a>.
