Add the cinnamon stick, cardamom pods, cloves, coriander seeds, peppercorns, cumin seeds and fennel seeds.  Toast for a few minutes, stirring, until the spices are toasted and fragrant.  Transfer to an electric grinder, add the bay leaf and ground into a powder.
