{"id":1823,"date":"2019-01-04T05:15:06","date_gmt":"2019-01-03T21:15:06","guid":{"rendered":"http:\/\/www.marga.org\/foodblog\/?p=1823"},"modified":"2019-01-04T05:17:14","modified_gmt":"2019-01-03T21:17:14","slug":"chestnut-soup","status":"publish","type":"post","link":"https:\/\/www.marga.org\/foodblog\/2019\/01\/chestnut-soup\/","title":{"rendered":"Chestnut Soup"},"content":{"rendered":"\n<p>I wanted to make chestnut soup for my <a href=\"https:\/\/www.marga.org\/foodblog\/2019\/01\/christmas-eve-dinner-2017\/\">2017 Christmas Eve dinner<\/a>, but I wasn&#8217;t able to find chestnuts.  <a href=\"https:\/\/www.marga.org\/foodblog\/2018\/12\/christmas-eve-2018-menu\/\">This time<\/a>, I spotted them at Safeway delivery and was then able to find them at my local Safeway.  It&#8217;s a good thing because this soup was very good.<br><br>I followed the recipe closely, though I used Madeira instead of ruby port &#8211; I just didn&#8217;t want to have to buy it and I found many other recipes which used Madeira instead.  I also added nutmeg, something I also saw on other recipes.  I felt I added too much, but my guests disagreed.  <\/p>\n\n\n\n<p>This recipe served six as part of a multi-course menu.<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>4 Tbsp unsalted butter<\/li><li>1 medium carrot, finely chopped<\/li><li>1 celery rib, finely chopped<\/li><li>1\/2 medium onion, finely chopped<\/li><li>2 cups cooked chestnuts (~15 oz)<\/li><li>1 cup Madeira or ruby port<\/li><li>1 sprig of thyme<\/li><li>3 cups chicken stock<\/li><li>1\/2 cup heavy cream<\/li><li>a dash of nutmeg<\/li><li>salt &amp; pepper to taste<\/li><\/ul>\n\n\n\n<p><strong>Directions<\/strong><\/p>\n\n\n\n<p>Add butter to a medium sauce pan and melt over medium-low heat.  Add the carrot, celery and onion and saut\u00e9 until softened, about 10 minutes.  Add the chestnuts and cook for 4 minutes.  Add the Madeira and the thyme, turn heat to medium-high and cook until the based is reduced by half.  Add the stock, turn the heat to high and bring to a boil.  Cover, turn heat to low and simmer for 30 minutes.  Remove from heat and discard the sprig of thyme.<br><br>Stir in the cream.  Using an immersion blender, puree the soup.  Alternative, transfer it to a blender and puree it in batches.
