Really, all I did was make the sauce, reserve some of it before I added the beef, add some vegetable base and tofu.\u00a0 She was happy and I was happy I was able to feed her.\u00a0 I&#8217;m sure you can substitute another meat substitute for tofu, but that&#8217;s what I had at home.\u00a0 I always serve this with fresh sourdough bread.<\/p>\n<p><strong>Tofu Ropa Vieja<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 Tbsp olive oil<\/li>\n<li>1 onions, chopped<\/li>\n<li>2 garlic cloves, chopped<\/li>\n<li>1\/2 green bell pepper, chopped<\/li>\n<li>1 cups tomato sauce<\/li>\n<li>1\/2 cup red wine<\/li>\n<li>1 bay leaf<\/li>\n<li>1\/2 tsp <a href=\"https:\/\/www.betterthanbouillon.com\/products\/product-detail.aspx?productid=18\">vegetable base<\/a><\/li>\n<li>salt &amp; pepper to taste<\/li>\n<li>1 lb extra-firm tofu, cubed<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Heat olive oil over medium heat in a medium sauce pan. \u00a0Add the onion and garlic and cook until they start to caramelize. \u00a0Add the bell pepper and cook until soft. \u00a0Add the tomato sauce, wine, bay leaf and vegetable base. \u00a0Season with salt and pepper to taste and bring to a boil. \u00a0Cover, reduce the heat to low and cook for 15 minutes. \u00a0Uncover, and the tofu cubes and cook for another 15 minutes. \u00a0Taste for seasoning and serve.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I made Ropa Vieja for dinner tonight, one of my old-time favorites, and decided to serve the same thing to my vegetarian daughter.\u00a0 She was quite happy with the results.
