{"id":1684,"date":"2018-04-16T10:38:33","date_gmt":"2018-04-16T02:38:33","guid":{"rendered":"http:\/\/www.marga.org\/foodblog\/?p=1684"},"modified":"2018-04-16T10:38:33","modified_gmt":"2018-04-16T02:38:33","slug":"tofu-marsala","status":"publish","type":"post","link":"https:\/\/www.marga.org\/foodblog\/2018\/04\/tofu-marsala\/","title":{"rendered":"Tofu Marsala"},"content":{"rendered":"<p>Tonight I made <a href=\"https:\/\/www.marga.org\/foodblog\/2008\/02\/chicken-marsala-redux\/\">chicken Marsala<\/a> for Mike and I and adapted the recipe so that Mika, my vegetarian daughter, could have it with tofu.\u00a0 Really, all it took to adapt it was to use a separate pan to cook the chicken and substitute tofu for the chicken.\u00a0 But here it is in case she ever wants to make it herself.\u00a0 It was truly delicious.<\/p>\n<ul>\n<li>3 Tbsp butter<\/li>\n<li>1 small shallot, minced<\/li>\n<li>8 oz button mushrooms, sliced<\/li>\n<li>1\/2 cup + 2 Tbsp Marsala wine<\/li>\n<li>1 1\/2 tsp <a href=\"https:\/\/www.betterthanbouillon.com\/products\/product-detail.aspx?productid=18\">vegetable base<\/a><\/li>\n<li>3\/4 cup water<\/li>\n<li>2\/3 cup whipping cream<\/li>\n<li>1 lb extra firm tofu, sliced<\/li>\n<li>1 tsp lemon juice<\/li>\n<li>dash of dried or chopped sage<\/li>\n<li>salt &amp; pepper to taste<\/li>\n<\/ul>\n<p>Melt butter over medium heat in a frying pan.\u00a0 Add the shallot and cook for one minute.\u00a0 Add the mushrooms and cook, stirring occasionally, until the liquid evaporates.\u00a0 Set aside.<\/p>\n<p>Bring Marsala wine to a boil in a medium size sauce pan.\u00a0 Boil for 30 seconds and then add vegetable base, water, whipping cream and reserved mushrooms.\u00a0 Comine and cook over low heat for 10 minutes.<\/p>\n<p>Meanwhile, pan-fry tofu slices.<\/p>\n<p>When sauce is ready, add the remaining 2 Tbsp Marsala wine, the lemon juice and the sage. Stir and taste.
