{"id":1670,"date":"2017-12-26T03:18:02","date_gmt":"2017-12-25T19:18:02","guid":{"rendered":"http:\/\/www.marga.org\/foodblog\/?p=1670"},"modified":"2017-12-26T03:18:02","modified_gmt":"2017-12-25T19:18:02","slug":"pear-goat-cheese-salad-with-caramelized-walnuts-and-cranberries","status":"publish","type":"post","link":"https:\/\/www.marga.org\/foodblog\/2017\/12\/pear-goat-cheese-salad-with-caramelized-walnuts-and-cranberries\/","title":{"rendered":"Pear &#038; Goat Cheese Salad with Caramelized Walnuts and Cranberries"},"content":{"rendered":"<p>I wanted to make a different salad for Christmas this year and finally decided on a pear and goat cheese salad.\u00a0 Alas, I couldn&#8217;t decide on any particular recipe, so I ended up making my regular <a href=\"http:\/\/www.marga.org\/food\/party\/mika2\/salad.html\">Mixed Green Salad with Gorgonzola Vinaigrette<\/a> and simply adding the ingredients I wanted to use.\u00a0 It came out delicious.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1\/4 cup extra virgin olive oil<\/li>\n<li>1 1\/2 Tbsp. raspberry vinegar<\/li>\n<li>5 oz mixed greens<\/li>\n<li>1 bunch of green onions, sliced<\/li>\n<li>1\/4 cup cranberries<\/li>\n<li>1\/4 cup caramelized walnuts<a href=\"#*\">*<\/a><\/li>\n<li>3 Tbsp. goat cheese<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>In a small bowl, whisk together olive oil and raspberry vinegar. Set aside.<\/p>\n<p>Toss together mixed greens, green onions, cranberries and walnuts in a salad bowl.\u00a0 Add vinaigrette and mix well.\u00a0 Crumble goat cheese on top and mix again.<\/p>\n<p><b><a name=\"*\"><\/a>*<\/b> To caramelized walnuts, place 1\/4 cup walnut pieces, 1 Tbsp. sugar and 1 tsp. butter in a small saucepan.\u00a0 Heat over medium heat, stirring constantly, until the butter and sugar melt and the walnut pieces are well coated with it.\u00a0 Pour onto parchment paper and quickly separate the pieces.\u00a0 Let cool.
