{"id":1474,"date":"2014-03-17T12:16:02","date_gmt":"2014-03-17T04:16:02","guid":{"rendered":"http:\/\/www.marga.org\/foodblog\/?p=1474"},"modified":"2014-03-17T12:16:02","modified_gmt":"2014-03-17T04:16:02","slug":"chicken-luisita-recipe","status":"publish","type":"post","link":"https:\/\/www.marga.org\/foodblog\/2014\/03\/chicken-luisita-recipe\/","title":{"rendered":"Chicken Luisita &#8211; Recipe"},"content":{"rendered":"<p>I got some fresh tarragon to make <a href=\"http:\/\/www.marga.org\/food\/int\/france\/lobster.html\">Lobster Thermidor<\/a> and I wanted to use what was left before it went bad. \u00a0So I went looking for an easy recipe that had ingredients I had at home. \u00a0I completely lucked out with\u00a0Peter Micheli&#8217;s <a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Chicken-Louisa-103553\">Chicken Louisa<\/a> at Epicurious.com. \u00a0 I didn&#8217;t have tomatoes, though, so I substituted with tomato puree.\u00a0 I also used leftover rose champagne instead of wine.\u00a0 For that reason, I&#8217;m changing the name &#8211; slightly :-).<\/p>\n<p>This recipe can be done in much less than an hour. I served it with plain couscous, but it was also great with homemade white bread.<\/p>\n<h3>Chicken Luisita<\/h3>\n<ul>\n<li>8 boneless, skinless chicken thigh fillets<\/li>\n<li>salt &amp; pepper to taste<\/li>\n<li>1 Tbsp.\u00a0 olive oil<\/li>\n<li>1 Tbsp. unsalted butter<\/li>\n<li>1 shallot, finely chopped<\/li>\n<li>1\/2 cup white wine<\/li>\n<li>3\/4 cup heavy cream<\/li>\n<li>1 15 oz can tomato puree<\/li>\n<li>2 Tbsp. fresh tarragon, finely chopped<\/li>\n<li>1\/2 tsp. chicken stock base<\/li>\n<\/ul>\n<div>Pat chicken dry.\u00a0 Season with salt and pepper.<\/div>\n<div><\/div>\n<div>Heat oil and butter together in a frying pan over moderately high heat.\u00a0 Brown chicken on both sides, about 2 minutes per side.\u00a0 Remove chicken and keep warm in a separate plate.<\/div>\n<div><\/div>\n<div>Add shallot and cook for one minute.\u00a0 Deglaze with the wine and cook until wine is reduced by half. Add the cream, tomato puree, tarragon and chicken base.\u00a0 Mix, bring to a boil, and then reduce heat to low.\u00a0 Cook for 3 minutes.
