{"id":1469,"date":"2014-02-16T05:50:15","date_gmt":"2014-02-15T21:50:15","guid":{"rendered":"http:\/\/www.marga.org\/foodblog\/?p=1469"},"modified":"2014-02-16T05:50:15","modified_gmt":"2014-02-15T21:50:15","slug":"a-mess-of-a-frico","status":"publish","type":"post","link":"https:\/\/www.marga.org\/foodblog\/2014\/02\/a-mess-of-a-frico\/","title":{"rendered":"A mess of a Frico"},"content":{"rendered":"<p>This week I&#8217;m cooking Friulian food, which meant that I had to make a <a href=\"http:\/\/en.wikipedia.org\/wiki\/Frico\">Frico<\/a>. \u00a0As I read in a blog (which I can&#8217;t find now), &#8220;frico&#8221; is what you made in the dead of winter, when nothing was growing and all you had was old cheese and old potatoes. \u00a0At its simplest, frico is just <a href=\"http:\/\/montasiocheese.com\">Montasio<\/a> cheese, shredded and fried with some flour into a thin wafer. \u00a0It can be eaten as a snack or with soups. \u00a0Montasio is a cowmilk cheese, eaten at different stages of its development, somewhat similar to Parmesan.<\/p>\n<p>More complicated versions of frico will include thinly sliced potatoes, as well as chopped onions and pancetta (if you&#8217;re rich!).<\/p>\n<p>I found a recipe that looked great and incorporated all those elements and wanted to make it. But then I lost it. \u00a0Rather than go with one of the other recipes, I tried to remember the steps on that one but made a HUGE mess of it. \u00a0First I fried the onions and chopped bacon together (didn&#8217;t have pancetta), then added slices of potatoes I&#8217;d previously boiled and topped with a lot of grated cheese. \u00a0I didn&#8217;t have Montasio, so I used a mixture of Parmesan and <a href=\"http:\/\/www.cowgirlcreamery.com\/library-of-cheese\/san-joaquin-gold\">San Joaquin Gold<\/a>, a cheese from the Cowgirl Creamery, which despite the cheesemakers claims that it&#8217;s a Fontina-turned-Cheddar, is actually <a href=\"http:\/\/www.amazon.com\/Fiscalini-Farms-Joaquin-Gold-approx\/dp\/B000OCTIZC\">very similar to Parmesan<\/a>.<\/p>\n<p>The cheese was supposed to melt, caramelize and harden, so that I could then flip the whole thing and cooked in the other side. \u00a0Of course, that didn&#8217;t happen.
