That was fortunate, because while searching for another recipe I came upon <a href=\"http:\/\/www.landolakes.com\/recipe\/2217\/best-ever-butter-cookies\">this one<\/a>, from butter company Land 0&#8217;Lakes.\u00a0 I like it more than my regular recipe, specially with the frosting.<\/p>\n<p>Without the frosting the cookies are too dry.\u00a0 That&#8217;s because of all the extra flour you use on them while you roll them.\u00a0 Making them thicker helps &#8211; mine were too thin.\u00a0 The icing, however, helps tremendously.\u00a0 The best part was that the kids didn&#8217;t like them that much &#8211; Mika found them too dry and while Camila likes to make baked goods, she doesn&#8217;t really like to eat them.\u00a0 The flavor was very good and, yes, you need all that vanilla extract.\u00a0 All the recipes for rolled cookies I&#8217;ve found call for orange juice or lemon juice, so I suspect the citric acid element is needed for chemical reasons.<\/p>\n<p>The key to making rolled cookies is getting the\u00a0dough at the right temperature to make them rollable. It takes 2-3 hours in the fridge, but I&#8217;ve noticed that 45 minutes in the freezer also do the trick.\u00a0 Work with\u00a0dough in small batches.\u00a0 As soon as one gets too soft, put it back in the fridge and get another one.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 cup salted butter, softened<\/li>\n<li>1 cup sugar<\/li>\n<li>1 egg<\/li>\n<li>2 Tbsp. orange juice<\/li>\n<li>1 Tbsp. vanilla extract<\/li>\n<li>2 1\/2 cups flour + more for dusting<\/li>\n<li>1 tsp. baking powder<\/li>\n<li><em>4 1&#8243; squares of plastic wrap<\/em><\/li>\n<\/ul>\n<p><strong>Icing<\/strong><\/p>\n<div>\n<ul>\n<li>3 cups powdered sugar<\/li>\n<li>1\/3 cup salted butter, softened<\/li>\n<li>1 tsp vanilla extract<\/li>\n<li>1-2 Tbsp. milk<\/li>\n<li>Food coloring, as desired<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<p><em>For the cookies<\/em><\/p>\n<p>With an electric mixer at medium speed, cream the butter with the sugar and the egg.\u00a0 Add the orange juice and vanilla extract and continue mixing until combined.\u00a0 Add the flour and baking soda and mix at low speed until combined.<\/p>\n<p>Wrap 1\/4th of the\u00a0dough. with each plastic wrap square. Flatten slightly.\u00a0 Refrigerate until firm, 2 to 3 hours.<\/p>\n<p>Heat oven to 400\u00b0F.<\/p>\n<p>Lightly flour a working surface and a rolling pin.\u00a0 Roll out one package of batter to a 1\/4&#8243; thickness.\u00a0 Cut with cookie cutters.\u00a0 Place 1&#8243; apart onto ungreased cookie sheets.\u00a0 Bake for 6 to 8 minutes.\u00a0 It&#8217;s ready when the edges of the cookie start to turn brown.\u00a0 Remove from oven and let stand for one minute before transferring to cooling racks.<\/p>\n<p>Repeat with the rest of the dough.<\/p>\n<p><em>For the Icing<\/em><\/div>\n<div><\/div>\n<div>Using an electric mixer at low speed, beat together the powdered sugar, butter and vanilla.\u00a0 Scrape the sides of the bowl often.\u00a0 Add enough milk for your desired consistency.<\/div>\n<div><\/div>\n<div>Divide into small bowl and color each one with food coloring.\u00a0 Spread over cookies and allow to dry.<br \/>\n<a href=\"http:\/\/www.marga.org\/food\/all.html\">Marga&#8217;s Best Recipes<\/a><\/p>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Camila wanted to make Christmas cookie, and while I have a pretty good recipe, it called for some ingredients that I didn&#8217;t have at home.
