{"id":1135,"date":"2011-09-01T08:10:49","date_gmt":"2011-09-01T00:10:49","guid":{"rendered":"http:\/\/www.marga.org\/foodblog\/?p=1135"},"modified":"2011-09-09T11:48:55","modified_gmt":"2011-09-09T03:48:55","slug":"argentinian-in-top-chef-just-desserts","status":"publish","type":"post","link":"https:\/\/www.marga.org\/foodblog\/2011\/09\/argentinian-in-top-chef-just-desserts\/","title":{"rendered":"Argentinian in Top Chef Just Desserts"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-1136\" title=\"top-chef-just-desserts-2-Nelson-Paz\" src=\"https:\/\/www.marga.org\/foodblog\/wp-content\/uploads\/top-chef-just-desserts-2-Nelson-Paz-224x300.jpg\" alt=\"\" width=\"224\" height=\"300\" srcset=\"https:\/\/www.marga.org\/foodblog\/wp-content\/uploads\/top-chef-just-desserts-2-Nelson-Paz-224x300.jpg 224w, https:\/\/www.marga.org\/foodblog\/wp-content\/uploads\/top-chef-just-desserts-2-Nelson-Paz.jpg 500w\" sizes=\"auto, (max-width: 224px) 100vw, 224px\" \/>This season <a href=\"http:\/\/www.bravotv.com\/top-chef-just-desserts\/season-2\/\">Top Chef Just Desserts<\/a> features an Argentinian pasty chef.\u00a0 <a href=\"http:\/\/www.bravotv.com\/top-chef-just-desserts\/season-2\/bio\/nelson-paz\">Nelson Paz<\/a> is a native of Buenos Aires and a graduate of the <a href=\"http:\/\/www.iag.com.ar\/\">Argentine Institute of Gastronomy<\/a>.\u00a0 He&#8217;s currently pastry chef at the <a href=\"http:\/\/www.mandarinoriental.com\/boston\/\">Mandarin Oriental <\/a>hotel in Boston.<\/p>\n<p>So, needless to say, I&#8217;m going to root for Nelson this season.\u00a0 So far my impressions of him are mixed.\u00a0 In a challenge in which they had to create a dessert based on a fairy tale, he said he was from Argentina and therefore didn&#8217;t know any of them.\u00a0 And that&#8217;s kind of BS.\u00a0 Both the story of Little Red Riding Hood (<em>Caperucita Roja<\/em>) and Hansel and Gretel are very famous in Argentina, everyone knows them.\u00a0 I did have a book on Goldilocks and the Three Bears (<em>Ricitos de Oro<\/em>), though that may be much less common.\u00a0 Jack and the Beanstalk, on the other hand, was, indeed, completely unknown when I was growing up (though Nelson is much younger than I).\u00a0 That said, he might not have recognized the names of those children&#8217;s books in English.<\/p>\n<p>The show didn&#8217;t focus much on him, so it&#8217;s hard to know how good he is.\u00a0 He helped another contestant, Orlando Santos, build an <a href=\"http:\/\/www.bravotv.com\/media\/imagecache\/photo-scaled\/images\/top-chef-just-desserts-season-2-gallery-rate-the-plate-201-18.jpg\">amazing show piece<\/a>, so he has some technical expertise, but it&#8217;s not clear how much of the design, if any, was his.\u00a0 Still, for the time being, at lest, I&#8217;ll be rooting for him.<\/p>\n<p>Vamos, Nelson!<\/p>\n<p><strong>Update<\/strong>: I&#8217;m sorry to say that Nelson was already eliminated from the show.\u00a0 He seemed very skilled, but I wish he would have drawn more from Argentinian flavors.\u00a0 For example, on the last show they concentrated on making white and pink desserts. He made a lollipop that was too hard to eat and not good enough.\u00a0 Instead, he could have made his own version of <em>merengadas<\/em>, a great cookie with two plain cookie shells (but he could have covered them on merengue, white chocolate or just powdered sugar) and a pink, marshmallowish\/spongish finish rolled in shredded coconut.\u00a0 These things are really addictive and very fun to eat (that said, they are not very sophisticated, they&#8217;re really a childhood treat).\u00a0 Well, Nelson is out but I found <a href=\"http:\/\/www.utilisima.com\/recetas\/4439-galletas-merengadas.html\">a recipe<\/a> for merengadas and I&#8217;m going to make them myself \ud83d\ude42<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This season Top Chef Just Desserts features an Argentinian pasty chef.\u00a0 Nelson Paz is a native of Buenos Aires and a graduate of the Argentine Institute of Gastronomy.\u00a0 He&#8217;s currently pastry chef at the Mandarin Oriental hotel in Boston.
