{"id":1069,"date":"2011-07-11T09:39:17","date_gmt":"2011-07-11T01:39:17","guid":{"rendered":"http:\/\/www.marga.org\/foodblog\/?p=1069"},"modified":"2011-07-11T09:39:17","modified_gmt":"2011-07-11T01:39:17","slug":"beer-batter-for-fried-fish","status":"publish","type":"post","link":"https:\/\/www.marga.org\/foodblog\/2011\/07\/beer-batter-for-fried-fish\/","title":{"rendered":"Beer batter for Fried Fish"},"content":{"rendered":"<p>I&#8217;ve been trying to incorporate more fish into our diets, and while Camila is game for fish prepared any way, Mika doesn&#8217;t really like it.\u00a0 Alas, Camila only likes fish <em>because<\/em> Mika doesn&#8217;t like it, so I don&#8217;t have too much of an incentive of trying to convince Mika that fish is really good &#8211; Camila would probably stop liking it instantly.\u00a0 So instead I often prepare fish in the only way Mika will eat it: fried.\u00a0 And, let&#8217;s be realistic, I love fry fish too &#8211; so I&#8217;m using Mika as an excuse for as long as I can.<\/p>\n<p>Today Mika was not at home for dinner, but I still decided to make fried fish &#8211; excuses be damned.\u00a0 I&#8217;ve tried many, many, many batters before but I had not come across one that I liked.\u00a0 Tonight I finally found one.\u00a0 This is a very simple batter &#8211; really, couldn&#8217;t get simpler &#8211; but it was very crispy and actually tasty.\u00a0 The &#8220;secret&#8221; is using corn starch in addition to flour.\u00a0 Remember to salt the fish and dredge it in flour before soaking in the batter.\u00a0 Fry in high heat.\u00a0 I tried this batter with both swai and cod, but greatly preferred it on the swai.<\/p>\n<ul>\n<li>3\/4 cup flour<\/li>\n<li>1\/4 cup corn starch<\/li>\n<li>2 tsp. salt<\/li>\n<li>1 tsp. paprika<\/li>\n<li>3\/4 bottle Pale Ale<\/li>\n<\/ul>\n<p>Sift the flour, corn starch, salt and paprika together. Whisk in the Pale Ale.
