One of the things I like most about this project is how often my prejudices about unknown cuisines are challenged. If you had asked me what I thought about Icelandic cuisine before cooking these dishes, I'd have imagined some grilled fish and - for whatever reason - pickled herring. Instead, I got to cook three complex, interesting and delicious dishes.

Icelandic cuisine has its origins in the Nordic cuisine of the Middle Ages. It was heavy on fish and meats and, before the advent of the small ice age, local grains. Trade with Europe brought luxury goods, as well as recipes.

Today, Icelandic cuisine is innovative, and has adopted some of the trend seen in mainland Europe. The pepper cookies I made could probably be at home in much of the continent.
