Lemon Garlic Chicken & Potatoes

I have eaten my fair share of chicken with lemon and garlic at church festivals and friends' houses, and I can't get enough of it. Still, I haven't found a recipe that recreates those amazing flavors. This one gets close, but I didn't feel it had enough lemon or garlic. If I was to make it again, I'd use a whole head or garlic and 4 lemons.

Lemon Garlic Chicken & Potatoes


  • 4 lbs chicken pieces
  • 3 lbs potatoes, peeled and cut into large chunks
  • salt & pepper to taste
  • 8 cloves garlic, minced
  • 1/4 cup oregano
  • juice of 2-3 lemons
  • 1/2 cup olive oil
  • 1 1/2 cups water


Preheat oven to 355F.

Put chicken and potatoes in a large roasting pan. Sprinkle with salt and pepper. Top with garlic and oregano. Pour lemon juice, olive oil and water all over them. Bake for 45 minutes, turn chicken pieces and potatoes and then bake for an additional 45 minutes.
