Stir-Fried Beef with Mint

This is a very simple and very tasty recipe. It's basically just meat, so you need to serve it with something else, but it's meat you want to eat. You can use ground beef in this recipe to save time, but I think dicing it by hand is better as it helps retain the flavor and juice of the beef.

I followed the recipe pretty closely, though I increased the amount of beef I made. I also omitted the chilis as my children won't eat spicy food.

Stir-Fried Beef with Mint

Ingredients

  • 1/2 cup vegetable oil
  • 1 Tbsp. minced ginger
  • 1-4 Tbsp sliced Thai chilis (optional)
  • 1 lb diced or ground beef
  • 1 cup mint leaves, chopped
  • 1/4 cup cilantro leaves, chopped
  • 2 Tbsp soy sauce

Directions

Heat the oil in a wok or large saute pan over very high heat. Add the ginger and the peppers, if using, and stir for a few seconds. Add the beef and stir fry until brown on all sides. Add the mint and cilantro and stir fry until the leaves are wilted. Add the soy sauce and stir fry until the beef is cooked through. Drain grease before serving.
