There are many recipes for Creole seasoning out there, most are quite similar on their emphasis on paprika, garlic & onion powder and cayenne pepper, but may vary in having basil, thyme and celery seed. This one is basically Emeril's Original Essence Seasoning mix, a little lighter on the peppers to make it more child friendly.
2 1/2 Tbsp. paprika 2 Tbsp. salt 2 Tbsp. garlic powder 1 Tbsp. onion powder 1 Tbsp. oregano 1 Tbsp. thyme 2 tsp. cayenne pepper 1 tsp. black pepper
Mix all the ingredients together and keep in an airtight container.
