Fried Plantains

There isn't much to this "recipe" for fried plantains, just plantains and oil. You can use any vegetable oil (though I wouldn't use olive oil), I used peanut oil because it's what I had at hand. Make sure to use very ripe plantains, look for blackish spots on the peel.

Fried Plantains


  • oil
  • plantains


Heat an inch of oil in a wide pan until very hot but not smoking.

Slice the plantains at an angle into 1/3" chips. Fry the plantains until golden in one side, turn, and repeat with the other side. Remove with a slotted spoon and place on paper towels to drain. Serve hot.
