Mango Chicken

This is a simple dish: basically a breaded boneless chicken breast stuffed with mango chutney. The combination works, it's nice and satisfying, but not awe inspiring. I'd eat it again, maybe even make it.

I'm not giving any measurements for this recipe because it's the type of thing you have to eye. Make one breast or 2 to 3 thighs per person.

Mango Chicken


  • boneless chicken breasts and/or thighs
  • salt & pepper
  • garlic powder
  • mango chutney
  • all purpose flour
  • 1-3 eggs, beaten
  • breadcrumbs
  • oil for cooking


Preheat oven to 350F.

Place chicken on a working surface, cover with plastic wrap and pound until thin. Season it with salt, pepper and garlic powder. Spread a generous amount of chutney on half of the breast/thigh and fold together. Pass the folded chicken through flour, eggs and breadcrumbs.

Pour a thin layer of oil on a large frying pan, heat on high and saute chicken on both sides until brown. Transfer chicken to a baking dish and bake for 25 minutes or until cooked through.
