The austere Castilian flats are home to thousands of sheep, and Castilian gastronomy features roasted lamb as it's paramount dish (followed by roasted suckling pig). Alas, we are under a "no eating baby animals" rule, imposed by my 9-year-old daughter, so I had to rely on recipes using older animals. The food of this region is rustic and simple, and yet extremely comforting. It's worth visiting.


If you read Spanish, you can find a plethora of recipes from every province of Castile at ARecetas.com, a great site for all types of international recipes. Still, I mostly relied on Penélope Casas' books for this adventure, given how reliable her recipes tend to be.
