The cuisine of the Canary Islands shows influence from Africa, Europe (and in particular Spain) and the New World. Fish is plentiful, but the Canarians also love chicken, rabbit and other meats. Almonds show up on many of their dessert, as well as main dishes - but mojos, or raw dipping sauces, are probably the Islands' specialty - in particular served with their very popular papas arrugadas, or wrinkled potatoes.

I had meant to make the wrinkled potatoes to serve along with a cilantro mojo - but I bought the wrong type of potatoes - so we'll have to eat the mojo with something else. My final menu, therefore, consisted of:
