My Bosnian meal felt very meat heavy, but I couldn't really find many vegetable recipes that I could incorporate. I decided to go with this fried eggplant recipes both because it was vegetarian and because it was easy. It was an amazing hit. My friend Parker, in particular, loved it - and even Mike who doesn't like eggplant ate a bit of it.
- 1 large eggplant
- water & salt
- oil for frying
- 1 clove garlic, chopped
- parsley, chopped
Peel the eggplant and slice it into thin discs. Place them in salty water for 15 minutes. Squeeze the liquid out and dip them in flour. Fry them in oil until soft and golden brown. Garnish with garlic and parsley.
