Bengali Fried Potatoes

There are few dishes as simple and universal as fried potatoes (french fries). In this Bengali version they are sprinkled with turmeric and fried in mustard oil, giving them a slight exotic taste. They didn't turn out great when I made them - I probably used the wrong type of potatoes and didn't wait until the oil was hot enough - as some stuck at the bottom of the pot while most refused to get crispy. I also over-salted them! Still, they were delicious and they were very quickly gone.


Bengali Fried Potatoes

Ingredients

  • 4 potatoes
  • 1 tsp. ground turmeric
  • salt to taste
  • mustard oil
  • salt to taste.

    Instructions

    Peel and cut potatoes into thin sticks. Coat with turmeric and salt. Heat enough mustard oil to cover potatoes in a deep frying pan, add potatoes and fry until crispy. Remove and serve.
