Belizean Meat Balls

This recipe for meatballs is among the least successful I have made so far. They were rather dull and uninteresting, they were also a little bit too dry. Still, we ate them all.

The original recipe called for bacon, but it didn't say what to do with it! I decided to chop it and mix it with the ground beef and onion. It also called for the meatballs to be friend on "cooking fat", I decided use butter but I'm sure you could use oil as well.

Combine ground beef, bacon, onion, salt and paprika. Mix well, wet your hands and shape meat mixture into balls.

Melt the butter in a large sauce pan and fry the meat balls, turning to brown all over.

Add enough water to the pan to cover the meat balls half way. Stir in the tomato paste, bring to a boil, turn down the heat and simmer for 15-20 minutes. Mix the flour with a little bit of cold water and add to pan. Add pepper and dried thyme. Stir and boil for 5 more minutes. Serve.
