This salad is relatively simple and went well with the kofta, but it's nothing too special.
1 head of romaine lettuce 1/2 a small cucumber, peeled and thinly sliced 1 bunch of scallions, chopped 1/4 cup frech mint leaves, chopped 1/4 cup parsley, chopped 1/4 cup olive oil juice from one lemon salt and black pepper to taste.
Tear lettuce leaves on bite-size pieces. Combine lettuce leaves, cucumber, scallions, mint and parsely. Mix olive oil and juice, season with salt and pepper and whisk well. Pour over the greens, toss gently and serve at once.
