Penuche

Once in a great while Granny or Gladys would make chocolate fudge - I can still taste the sweet chocolaty flavor and feel the elastic texture. I don't think I ever had penuche, however, but the recipe appears in their cookbook. I'll make it some day.

Ingredients

  • 2 cups brown sugar
  • 1/2 cup evaporated milk
  • 2 tbsp. butter
  • 1 tsp. vanilla
  • 1/8 tsp. salt
  • 1 cup walnuts, chopped

Directions

Grease a glass pan.

Place sugar and milk in a medium size sauce pan and cook, over low heat and stirring constantly, until the sugar is dissolved. Continue cooking, stirring constantly, until the mixture reaches 236F or until it forms a soft ball when tested in water. Add the butter and mix. Cool slightly and add the vanilla, salt and walnuts. Beat until creamy.

Pour into pan, cool and cut into squares.
