Apple Sauce Cake a la Lacabe



My sister tried this cake a couple of days ago and thought it was quite good. Her only advise is to cook it for at least 55-60 minutes, it was still sort of raw after 50 minutes.

Ingredients

  • 1 cup butter
  • 1 1/2 cups brown sugar
  • 1 egg, beaten
  • 1 tsp. baking soda
  • 1 cup thick apple sauce
  • 2 cups flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ground cloves or allspice
  • 1/2 tsp. ground ginger (optional)
  • 1 cup raisins or nuts (optional)

    Directions

    Preheat oven to 350F

    Grease a loaf pan.

    Cream butter and sugar, mix in egg. Dissolve baking soda in the apple sauce and add to the butter. Mix. In a separate bowl, sift together the flour, salt, cinnamon, cloves and ginger. Mix into the apple sauce mixture. Mix in the raisins or nuts, if using. The resulting batter should be fairly stiff.

    Pour batter into the loaf pan and bake for 50-60 minutes.
