Oven Roasted Potatoes


I had meant to make papas arrugadas or wrinkled potatoes, but I bought the wrong kind of potatoes so I was left with making this recipe instead. It was good, but not great, and I don't think it was worth all the effort it took (peeling & slicing mostly). My biggest mistake was not pre-heating the oven before making them (the recipe didn't say to do so), which led to the potatoes not being fully cooked after 45 minutes - make sure you do preheat it.


Oven Roasted Potatoes

Ingredients

  • olive oil
  • 2 lbs potatoes, peeled & cut into 1/4"-thick slices
  • 1 yellow onion, thinly sliced
  • 8 cloves of garlic, thinly sliced
  • salt
  • ground black pepper
  • paprika
  • dried thyme leaves
  • 3 Tbsp. water

    Instructions

    Preheat oven to 400F

    Lightly oil a large baking pan with the olive oil. Put a layer of potato slices on the pan, top with sliced onions and garlic. Sprinkle salt, pepper, paprika and thyme. Drizzle some olive oil on top. Cover with another layer of potato slices and repeat until all the ingredients are gone. Drizzle with water. Bake until done, about 45 minutes.
