The Cajuns are the descendants of French speaking immigrants, that had settled in Canada during the 17th century. They were later conquered by the British and expelled from their lands during the French-Indian war. Many of them went on to settle in Louisiana. They brought their culinary traditions, which they adapted to local ingredients forming their own and very characteristic cuisine.

Cajun cuisine is a peasant cuisine. Meats were usually hunted and vegetables grown. Most meals would be accompanied with cornbread, rice or some other starch, and cooked vegetables. The recipes I made are some of the most famous Cajun recipes. I didn't make dessert, but I previously cooked some Acadian cakes, which would follow in the same culinary tradition (Acadian was the name originally given to the Cajuns).
