Bananas and banana desserts are quite common in Bermuda, so I knew I wanted them represented in my menu. This recipe for banana pie (note, it's not a banana cream pie) was quite simple and it was good, though not outstanding. Still, there wasn't one crumb left at the end of the meal.
3 medium bananas 2 egg whites 1 cup powdered sugar 1/4 tsp. salt 1/2 tsp. lemon juice 1 pie shell 1/2 cu whipped cream 1/3 cup chopped nuts
Preheat oven to 325 F
Pass bananas through a sieve. Add the egg whites, sugar, salt and lemon juice. Beat together until light and fluffy. Pour into pie shell. Bake for 30 minutes or until hard. Let cool, top with whipped cream and nuts.
