Apfelkren

Apple Horseradish Sauce

boiled beef with apple horseradish sauce

Apfelkren is the traditional accompaniment to Tafelspitz (Viennese boiled beef). It's a simple, easy to make sauce and it's surprisingly tasty (at least for someone who doesn't usually like horseradish).

The recipe below is the one I made. I used fresh apples which I peeled and grated using a food processor. If that sounds like too much work for you, you may want to use store-bought apple sauce instead. Some recipes call for grated horseradish, though the one I used called for the prepared kind. This recipe made about twice as much sauce as I needed, you may want to reduce it accordingly.

Apfelkren

Ingredients

  • 2 Golden Delicious Apples
  • 1 tbsp. white wine vinegar
  • 1 tbsp. lemon juice
  • 3 tbsp. prepared horseradish.

    Instructions

Peel, core and grate apples. In a heavy pot, combine apples, vinegar, lemon juice and horseradish. Mix and cook over medium heat until very mushy.

Adapted from a recipe at Sally's Place.
