I made this recipe to go with the Sweet Corn Fritters with Roast Tomato & Bacon. It's not Australian per se, but I don't know if they roast tomatoes differently in Australia than anywhere else. It's a very simple recipe and I needed it as I'd never roasted tomatoes before.
Oven Roasted Tomatoes
3 tomatoes olive oil salt, pepper and sugar
Preheat oven to 300F. Cut tomatoes into thick slices, discarting the core. Line a baking sheet with aluminum foil. Rub bakings sheet with olive oil. Place tomato slices in a single layer. Sprinkle with salt, pepper and sugar. Roast unil the slices start shriveling, about 1 hour.
