Nouilles a l'Alsacienne
(Alsatian poppy seed noodles)

This poppy-seed noodles are an Alsatian specialty and they are worth a try, both for their unusual flavor and beautiful presentation. They are very easy and quick to make and we liked them quite a bit, though the mustard-based sauce is quite strong so you can't eat too much of this dish. For this reason, this works better as a side-dish rather than as an entry or appetizer.


Poppy seed noodles

Nouilles a l'Alsacienne

Ingredients

  • 1 lb. fettuccine noodles, fresh or dried
  • 6 tbsp. unsalted butter
  • 2 tbsp. Dijon mustard
  • 4 tbsp. Creme Fraiche or whipping cream
  • 2 tbsp. poppy seed
  • salt and pepper

    Instructions

    Cook fetuccinne in boiling water until done.

    Make sauce by melting the butter in a sauce over low heat. Add mustard and whisk to blend. Add creme fraiche or whipping cream, poppy seeds and salt and pepper to taste. Whisk in. Bring to a simmer and cook until well blended and slightly thickened (about 1 minute). Add cooked fettuccine and stir to coat. Cook on high heat for about 1 minute. Remove and serve.
